This Cheese Trail itinerary provides you with the opportunity to really experience what it means to be in Oxford County, talk with our artisans and local producers and take in the beautiful countryside. On this excursion, you'll spend most of your day with local woodworker Dave Schonberger who specializes in handcrafting beautiful, artisanal charcuterie boards. Craft you're own then grab a bite or a beer before heading home!
Stop 1: From Tree to Table: A Build-Your-Own-Board Experience

Enjoy a guided walk inside a Carolinian Forest with woodworker Dave Schonberger to a get a behind-the-scenes look at life in the country and get in touch with the roots of the forest. Enter the artisanal workshop and create your own live-edge charcuterie board alongside Dave using a piece of locally harvested lumber you select yourself. Draw your board with local artist Michelle Schonberger and work with a variety of tools including Dave's grandfather's tools to create your board. In addition to getting your hands dirty in the woodshop, enjoy a handpicked selection of savoury, local charcuterie while socializing near the vegetable garden around an open fire. Finally, return to the workshop to explore Dave's studio of handcrafted boards, add a custom tag to your work and learn how to use your new charcuterie board at home to enjoy with friends. If you're looking for a way to chill out after a morning of creating, Upper Thames Brewery is the spot for you! As the trail's first craft brewery, Upper Thames will be offering free live music every Saturday in May from 2-5 pm. Also on the dock? Check out their Big Cheese Days flight featuring their Dark Side Stout (feat. cacao nibs from Habitual Chocolate), Dark Side of the Moo Cheese (Gunn's Hill cheese washed in the beer), pieces of Habitual Chocolate and pretzels all served with deliciously curated tasting notes. Another can't miss is to try their new seasonal brew which will be released during Big Cheese Days or their famous local cheese charcuterie board. The options are endless!

This exclusive tasting event allows you to taste delicious pairings curated by SixThirtyNine's in-house sommelier in a small and intimate group. Stop 3: Local Cheese Prix Fixe Dinner

Sit down in a casual fine dining setting for a delicious five-course menu inspired by Oxford's local cheeses and the season's freshest local ingredients. Relax over a glass of wine or local beer as Chef Eric Boyar prepares a meal that is influenced by the seasons but also of course, the Cheese Trail's delicious cheeses. For a truly unique experience, book the Chef's table and watch as your meal comes together before your eyes. Reservations are recommended.
